Morning sunshine,

Yes there is a little bit of sunshine this morning! So so lovely. And about time after freaking 5 days straight of darkness and rain. It was actually those days that inspired me to this post. Because when the days are getting darker and darker, and colder and colder, we really need those small things that can make everything a bit warmer and cozier. Like a super creamy and tasty (and even healthy) peanutbutter porridge and a nice cup of coffee to start the day with.

When I lived in London I learned that Danish people are known for their ability to do exactly that; to create coziness and ease in our daily lives, through cooking, interior and daily habits. I even saw lots of article and guides named something like: “How to do hygge the Danish way”. Hygge is a danish word that explains this nice and peaceful feeling that can be created by either feeling good in a social group or be feeling at ease in a certain space.
And I totally think it is true that we are good at that! – We need to be, to get through weeks like the last one filled with both storms, constant rain and increasing darkness.


This porridge is super super creamy and has a lovely taste of crunchy peanuts and sesames. I top it with an easy (microwave-made) berry-compote, which complements the nutty-taste very well;

Peanutbutter and Sesame porridge

1/2 cup of oats
1/4 cup of seeds; sunflower of flax
1/4 cups of roasted sesames
1 tbs peanut butter
1/2 tsp tahin
1 tsp honey
1/2 tsp sea salt
2 tsp of skyr (or greek yogurt)

Skyr (or greek yogurt) mixed with 1 tbs coconut flour and a dash of vanilla powder
Berry-compote: strawberries and blueberries + dash of vanilla powder, smashed after 25 seconds in the microwave

– Put all of the porridge ingredients in a bowl and give them approximately 5 minutes in the microwave on medium-high heat. Stir in the mix after 2 minutes. It might be done sooner depending on your microwave. Easy peasy – and enjoy.
