I have been eating a lot of brownie lately. Yes almost óne brownie a day this week, and one day I even had brownies for lunch. But it is okay. Don’t worry. Cause these chocolate bean brownies are healthy, filled with protein and gives you a goooood shot of energy that will make wanna jump around. More importantly of course; they have a exceptionally rich luxurious chocolate taste.

I love love love beans!! They can be used to make veggie-burgers, dahls, chili sin carne – and even cakes man. Yes, beans are a vegetarian’s best friend. As you probably know beans are one of the best vegetarian sources for protein.
The butter beans I used here has a super, well yes, buttery, soft and creamy consistency that makes these chocolate bean brownies super fudge and gooey.

Raw cocoa powder is healthier than a salad 

I totally get if you know think; Okidoki.. But hold on for a second. It has in fact been proven that raw cocoa powder and cocoa nibs ( both claimed “superfood”) contain more antioxidants and vitamins than can be found in most salads. Yes, cocoa actually is the superfood with the highest amount of antioxidants in the world. So no bad chocolate-conscience here.

Besides being stuffed with antioxidants and vitamins, cocoa is further a true natural anti-depressants. I am sure you have heard it before with chocolate, but unfortunately it doesn’t apply too candy bars. This raw and organic kind however will release a high amount of endorphins that will boost up your mood and energy level. 

I have read articles before where people are experimenting with an “afternoon” cocoa brownie instead of a cup of coffee or tea, to get that extra shot of energy for the last part of the day. Worth considering, I would say.

Contain a small amount of sweetener in the from of honey, and a tiny bit of sirup. And that is actually it. The rest of the sweetness comes from dates. The chocolate bean brownies has a pretty intense amount of protein, not only from beans but also from eggs. AND they are glutenfree. Enjoy them as a healthy dessert, post-workout snack or, well why not, as a breakfast if you are feeling like some full-on self-indulging.

Choco bean brownies
Serves 4
  1. 1 can of butter beans
  2. 2 eggs
  3. 1 cup oats
  4. 4 tbs kakaopulver
  5. 2 tbs skyr
  6. 2 tbs water
  7. 1/2 cup dates
  8. 3 tbs honey
  9. 1 tbs sirup
  10. 2 tsp vanilja powder
  11. 1/2 tsp salt
  12. 1 tsp baking powder
  13. 3 tbs coconut oil
  14. 1/2 cup chopped dark chocolate (70 or 80%)
  1. 2 tbs cocoa
  2. 2 tbs coconut oil
  3. 1/2 tsp vanilla powder
  4. 1,5 tbs honey
  5. 1 tsp vanilla extract
  6. A pinch of salt
  1. First blend the oats to flour.
  2. Then the oat flour and the rest of the ingredients and allocate the dough in a ovenproof dish, that you have greased in coconut oil.
  3. Bake the cake for approximately 15 min on 180 °.
  1. Heat the coconut oil for 10-20 seconds in the microwave and mix in the rest of the ingredients.
  2. Wait with spreading the frosting on the brownie until it has cooled a bit.
