THE WORLD’S BEST (VEGAN) CURRY SALAD

Actually it is up to you if you want it to be vegan or vegetarian, depending on if you are using soya or regular yogurt. No matter what it is insanely yummy!
Vegan curry salad tastes like spring and sunshine, while it has an indulging milky consistency.

Christmas lunch 

The creamy salad has a piquant flavour that surely will satisfy you after first bite. The salty and round aromas in the gooey mixture makes you wanna eat it raw – although it tastes amazingly on top of a crispy piece of bread as well.
I will bring it for our yearly traditional family Christmas lunch. It fits perfectly amongst all of the pickled fish, eggs, rye bread and dill. 

Know your (vegetarian) spices 

For me, becoming a vegetarian has really made me a spice-fanatic. I love experimenting with different and untraditional spices and herbs, and find ways to create new alternatives for traditional dishes. However there are some spices that just are unquestionably genius in vegetarian dishes. Her amongst curry. Both in cold and warm editions.

Danish 

The danish Christmas food selection is very varied. On the one side it is mostly fat, meat-y, greasy and caramelized. But on the other hand it can be very nordic, seasonable, fresh and piquant. Vegetarian, or vegan, curry salad contains some delightful fresh Nordic flavours, that are Christmas-y without being neither fat, greasy or meat-y.

Curry salad
Serves 4
Ingredients
  1. 1 can cooked and drained chickpeas
  2. 2 carrots
  3. 2 shallots
  4. 1 avokado
  5. 5 tbs soya yogurt
  6. 1 tbs curry
  7. 1 tsp smoked paprika
  8. 1 tsp mustard
  9. 1 large handful raisins
Instructions
  1. Mix everything but chickpeas, raisins and carrots together with a hand mixer.
  2. Shred the carrots and roughly smash the chickpeas using the flat side of a knife. Turn them and the raisins around in the blended mix.
  3. Voila.
