Lots of versions of “the healthy mac n cheese recipe” out there at the moment.
Some are better than others. But, in general, I am a huge fan of the trend!

For me, however, the traditional mac n cheese has to be pimped up a bit in order to be interesting. Even if it is healthy!
This one is sooo smooth and yummy – and has loots of warming flavours such a chili, garlic and spring onions.

Spicy, creamy and comfy

This vegan and healthy mac n cheese recipe is so comforting for the soul. And here I both mean because of its gooey and creamy consistency, but most certainly also because of its spiciness-level. 

Here in January I rarely eat anything cold. Okay perhaps for lunch, but for breakfast and dinner I try to make something warm. For me, food are a big part of “getting through” the coldest month.
And no question; this healthy mac n cheese recipe will heat you up all the way from your bones.

A tip when eating this ; be careful – it is very hard to stop again once you’ve first started. Especially if you are eating it while doing something else, like watching television. Suddenly you have eaten almost the whole thing.. 
The consistency is just so damn creamy and velvety that your mouth are craving that it keeps coming.

Vegan pasta ?

Not only is this mac n cheese healthy, it is also vegan. However, sometimes fresh pasta has eggs on the ingredient list, so look out for that if you want to be sure. 

I have started to eat a lot more vegan, and really enjoy it. However my mentality still is that “something” is better than “nothing”, and if veganism becomes such a project that you just end up quitting, it doesn’t make any sense doing it.
So you will still find recipes with both eggs and cheese here on the blog – combined with vegan dishes, when I find that it makes sense for both taste and production.

Vegan mac n cheese
Serves 3
  1. 2 cups water
  2. 3 tomatoes, diced
  3. 3 cups beans
  4. 1 onion, chopped
  5. 1 fresh chili, chopped
  6. 2 handfull spring onions, chopped
  7. 3 cloves of garlic, minced
  8. 2 tsp chili flakes
  9. 1,5 tsp cayenne pepper
  10. 1 tsp smoked paprika
  11. 2 cups whole grain pasta or macaroni
  12. 5 tbs nutritional yeast
  13. 1 tbs mustard
  14. 1 tbs maple zyrup
  15. Juice from 1 lemon
  16. Salt and pepper
  17. Olive oil
  1. Saute onion and garlic in some olive oil. Add cayenne pepper, smoked paprika, chili flakes and fresh chili, and fry for a couple of minutes.
  2. Now add 1 cup water, 2 cup beans and diced tomatoes. Let that simmer on low heat while you make the cheese sauce.
  3. Blend one cup beans, nutritional yeast, mustard, 1 tbs olive oil, maple syrup, lemon juice and 1 cup water.
  4. Then make the pasta according to directions. 
When done, add pasta, cheese sauce and spring onions to the mix and combine.
  5. Take of heat and enjoy.
