CAPRESE MUSHROOMS WITH A SWEET BALSAMIC GLAZE

Caprese mushrooms with a sweet balsamic glaze is such an easy gourmet recipe! The ingredient list can be counted on two hands, and it takes no time to make.
Okay, the 2-ingredient sauce(!) has to be refrigerated for a couple of hours to thicken – but that is it. Who knew that balsamic vinegar and a tiny bit of cane sugar can turn into the most delicious Italian glaze?!

An easy gourmet recipe

A simple couscous salad, portobello mushrooms and a 2-ingredient sauce perhaps doesn’t sound like gourmet. But oh wait! Wait until you try it.
Rich, gooey mushrooms with a fresh couscous salad, makes an easy, but so delicious mix of all that is good. I think it is the fewest who would say no thanks to a creamy mix of mozzarella, tomatoes and lots of fresh basil.

But it gets better! Because it is the sweet balsamic glaze that really gives the dish justice. It is first when that sweet, thick and sharp glaze gets poured over the small mushroom wonders that the dish really turns into an easy gourmet recipe!

The most important ingredient

Portobello mushrooms are my best friends! On their own, they contain almost everything you want in a dish. Saltyness, gooeyness and a round flavour with lots of umami. When “grilled” in the oven something magical happens to them. They are infused with a rich aroma of the roundest mushroom flavour and get a toasty yet soft crust.
The only thing that is missing is a little bit of freshness and something sweet. So – hello delicious couscous salad and heavenly balsamic glaze.

Just a tiny bit of preparation

– makes cooking so much more fun and manageable. If you start thinking about what you’re gonna have for dinner in the morning, instead of at 6 o’clock in the evening, the process is going to go so much smoother. 

Like with these mushrooms; I quickly made the balsamic glaze in the morning and placed it in the fridge. It took 15 minutes. When I came home I used 20 minutes to make the mushrooms, and already had a delicious thick glaze ready to pour over them. 
Without having used much more than half an hour, a little bit of planning made it possible for me to make a delicious, easy gourmet recipe for my guests.

If you are as big of a fan of portobellos as me the dish can totally stand on its own. Otherwise it will make an impressing side dish or a delicious starter.

Ingredients
  1. 4-5 portobello mushrooms
  2. 1/2 cup cooked couscous
  3. 1/2 cup tomatoes, diced
  4. 1/2 cup fresh mozzarella, diced
  5. Fresh basil
, chopped
  6. 2 tbs olive oil
  7. Salt and pepper
  8. 1/3 cup balsamic vinegar
  9. 1 tbs cane sugar
Instructions
  1. Heat up the cane sugar and balsamic vinegar in a pot. When the sugar has melted, bring to a boil and then reduce to low heat. Let it simmer for 10-15 minutes.
  2. Now, take the glaze of the stove, transfer it to a glas and put it in the refrigerator until cooled and thickened (it takes a couple of hours).
  3. When the glaze is done make the mushrooms. First clean them and remove the stems.
  4. Then place them on a baking trey and drizzle them with a bit of olive oil, salt and pepper. Bake them on 180 °C for 5-10 minutes.
  5. Then throw together the basil, mozzarella, couscous, tomatoes and olive oil in a bowl. Throw a bit of salt and pepper in there as well.
  6. When the mushrooms are done stuff them as tight as you can with the couscous mix, and put them back in the oven - just for 1 minutes time to let the mozzarella melt a bit.
  7. Take them out and serve them with fresh black pepper and the delicious balsamic glaze.
