NUTTY EGG WRAPS WITH THE BEST BEAN FILLING ON EARTH

When I made these Mexican vegetarian wraps last week it was most of all a quick “what-is-left-in-the-fridge solution”. I was in the mood for something easy, healthy and spicy. In my close-to-empty fridge I found beans, eggs and an avocado. (And chili of course. Always chili) – so Mexican egg wraps it was.
My expectations were just to get full and satisfied. Nothing more, nothing less. But, when I tasted the bean filling I was blown away. OMG it was creamy!

I have made it 3 times since, refined the ingredient list a bit – and now I don’t feel like I am exaggerating when I say that it is the easiest AND creamiest vegetarian wraps recipe in the world!

Sometimes I use hours and lots of research on developing delicious vegetarian recipes. So it is hard to believe when something like this happens. When a completely unthought and impulsive cooking project turns into a genius recipe – that even is worth sharing here on the blog.

Insane creaminess – easy and healthy

Although the bean filling doesn’t include any cream and only 3 spoons of coconut milk, its consistency is impressively greasy. The good kind of greasy. It must be some harmonic fusion of the blended rice, avocado and beans. No matter what it is, I love it! And especially because it is insanely healthy and so easy to make. What more could you ask for?

Gluten-free

Of course regular wraps with gluten taste amazing, but these egg ones are really something special. Their flour-free ingredients gives them a delicious mushyness. I impulsively decided to add a bit of sesame to the recipe. That turned out to be a great idea. It gives their spongy consistency a bit of bite and a round nutty flavour.

You can of course stuff the egg wraps with whatever kind of delicious filling you want. You can even “customize” the wraps. Instead of sesame you could make them with spinach and turmeric or perhaps with basil and rosemary. The possibilities are endless, depending on what you put inside. Perhaps use them like me – as a delicious empty-the-fridge solution.

Vegetarian wraps
Serves 3
Wraps
  1. 3 eggs
  2. 4 tbs flax seeds + 8 tbs water (soaked for 20 minutes)
  3. 2 tbs sesames
  4. 1 tsp honey
  5. 3 tbs skyr or fat coconut milk
  6. Coconut oil
  7. Salt and pepper
bean filling
  1. 1 large shallot
  2. 1 onion
  3. 1 tsp cumin
  4. 1 tsp chiliflakes
  5. 1 tsp smoked paprika
  6. 1 fresh chili
  7. 1 tsp cane sugar
  8. 1 can of black beans
  9. 1/2 cup cooked brown rice
  10. 2 handfuls chopped cherry tomatoes
  11. Juice and zest from 1 lemon
  12. 1/2 cup water
  13. 1 tsp cane sugar
  14. 1 avokado
  15. Coconut oil
  16. Salt and pepper
Wraps
  1. Mix everything together in a blender or just in a mixing bowl.
  2. In a frying pan, fry the mixture like regular pancakes, using a bit of coconut oil. They need a couple of minutes on each side on medium heat.

  1. Fry shallots, onion, chili and spices for a couple of minutes in the coconut oil.
  2. Add the rest of the ingredients (except for avocado) and cook for 20-30 minutes.
  3. Take of heat and add chopped avokado.
 With a hand mixer blend it roughly - leaving some big chunks of beans and tomatoes.
